Plantain and Drumstick Stir-fry

 





Ingredients:

  • 2 ripe plantains
  • 200g drumstick (cut into pieces)
  • 2 tablespoons vegetable oil
  • 1 tablespoon garlic (minced)
  • Salt to taste
  • Pepper to taste

Instructions:

  • Heat the vegetable oil in a skillet over medium heat.
  • Add the minced garlic and sauté for about 30 seconds until fragrant.
  • Add the drumstick pieces to the skillet and cook for about 5 minutes until they are starting to brown.
  • Slice the ripe plantains into rounds and add them to the skillet.
  • Season with salt and pepper to taste, and stir everything together.
  • Cook for another 5-7 minutes, stirring occasionally, until the plantains are golden and the drumstick is cooked through.
  • Remove from heat and serve hot.
