Festive Vegan Keto Stuffed Peppers

Ingredients:

·         1 large bell pepper

·         100g of cauliflower rice

·         50g of walnuts, chopped

·         50g of spinach, chopped

·         30g of nutritional yeast

·         1 tablespoon of olive oil

·         1 teaspoon of garlic powder

·         Salt and pepper to taste

·         1 teaspoon of smoked paprika

Kitchen Tools Needed:

·         Knife

·         Chopping Board

·         Baking Tray

·         Oven

Instructions:

·         Preheat the oven to 180°C (350°F).

·         Cut the top off the bell pepper and remove the seeds.

·         In a bowl, mix the cauliflower rice, walnuts, spinach, nutritional yeast, olive oil, garlic powder, smoked paprika, salt, and pepper until well combined.

·         Stuff the bell pepper with the mixture until it's filled to the top.

·         Place the stuffed pepper on a baking tray and bake for 20 minutes or until the pepper is tender.

·         Remove from the oven and let it cool slightly before serving.
