1 large bell pepper

100g of cauliflower rice

50g of walnuts, chopped

50g of spinach, chopped

30g of nutritional yeast

1 tablespoon of olive oil

1 teaspoon of smoked paprika

Instructions:

Preheat the oven to 180°C (350°F).
·
Cut the top off the bell pepper and remove the seeds.
·
In a bowl, mix the cauliflower rice, walnuts, spinach, nutritional
yeast, olive oil, garlic powder, smoked paprika, salt, and pepper until well
combined.
·
Stuff the bell pepper with the mixture until it's filled to the top.
·
Place the stuffed pepper on a baking tray and bake for 20 minutes or
until the pepper is tender.
·
Remove from the oven and let it cool slightly before serving.
