- 500g of baby potatoes
- 100g of bacon
- 1 medium onion, finely chopped
- 3 tablespoons of apple cider vinegar
- 2 tablespoons of mustard
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish

Instructions:
- Boil the baby potatoes in a pot of salted water until tender, about 15 minutes. Drain and let cool slightly, then slice them into halves.
- In a frying pan, cook the bacon over medium heat until crispy. Remove from the pan and set aside, leaving the fat in the pan.
- Add the chopped onion to the bacon fat and sauté until translucent.
- In a mixing bowl, combine the apple cider vinegar, mustard, salt, and pepper. Toss in the warm sliced potatoes and mix gently.
- Add the crispy bacon and sautéed onions to the potatoes, mixing everything thoroughly.
- Garnish with fresh parsley before serving.
